French Onion Dip

2 cups sour cream
1/4 cup mayo
2 medium yellow onions
2 tablespoons butter
5 strips bacon
3 cloves garlic
a couple tablespoons finely chopped chives
1 tablespoon finely chopped parsley
salt to taste
pepper to taste

Cook bacon in the oven at 400 degrees for 13 minutes.

Slice onions in half, remove the first layer, and slice into medium thick slices.

Transfer cooked bacon to a plate lined with paper towel and reserve bacon fat.

Pour bacon fat into a skillet and add 1 tablespoon of butter.

Cook onions in the skillet, stirring occasionally, for 25 to 30 minutes until caramelized.

Chop garlic and add to the onions when they are about a minute from being done.

Let onions cool after cooking.

In a mixing bowl, combine chopped chives, parsley, sour cream, and mayo.

Chop the caramelized onions and mix them into the dip.

Season with salt and pepper to taste.
