Add 2 large eggs to a bowl.
Pour in 1/2 cup of heavy whipping cream.
Add 1 teaspoon of vanilla extract and mix well until combined.
Set the egg mixture aside.
In another bowl, combine 1/2 cup of sugar and 1/4 teaspoon of ground cinnamon to create the cinnamon sugar mixture.
Prepare Texas toast by cutting it into sticks; you can remove the crust if desired.
Preheat a small pan and add a small amount of butter to melt.
Quickly dunk each bread stick into the egg mixture, ensuring only the exterior is coated, not saturated.
Place the coated bread stick into the melted butter in the pan.
Cook the bread sticks over low heat until the exterior is golden brown and toasty, flipping them with tongs for safety.
Once cooked, dredge the French toast sticks in the cinnamon sugar mixture before serving.
