Cut chicken into pieces and season with salt and pepper.
Heat a large pot over medium heat and add a drizzle of oil.
Brown the chicken pieces on all sides, about 5-7 minutes.
Remove chicken and set aside; add chopped onion, leeks, carrots, and celery to the pot.
Sauté vegetables until softened, about 5 minutes.
Add minced garlic and cook for another minute until fragrant.
Return chicken to the pot and add bay leaves, thyme, and chicken broth.
Bring to a simmer, cover, and cook for 30-40 minutes until chicken is tender.
Remove chicken and let cool slightly before shredding.
Add diced potatoes to the pot and cook until tender, about 15 minutes.
In a bowl, whisk together egg yolks and heavy cream.
Temper the egg mixture by adding a ladle of hot broth, then stir back into the pot.
Return shredded chicken to the pot and heat through, adjusting seasoning with salt and pepper.
Garnish with chopped parsley before serving.
