Kale Salad with Tahini Dressing

1 sweet potato
2 tbsp extra virgin olive oil
1 clove garlic
juice of 1 small lemon
1/2 tsp dijon mustard
2 tbsp tahini
pinch of salt
250g kale
feta or halloumi cheese (optional)

Open a can of chickpeas and drain them.

Add 1-2 tbsp of water to thin the dressing to your preferred consistency.

Plate up 250g of washed and chopped kale in a salad bowl.
