4 cups / 120g Kale - Thoroughly rinsed and pat dry with a clean kitchen towel / stems removed and finely chopped
4 cups / 400g Green Cabbage - (1/4th of a medium cabbage) Thoroughly rinsed, core removed and finely chopped
1/2 cup / 20g Cilantro - chopped
1/2 to 3/4 cup / 30 to 45g Green Onion - chopped
3/4 cup / 110g Roasted Peanuts - chopped
3+1/2 to 4 Tablespoons Olive Oil
2+1/2 Tablespoon (or to taste) White vinegar or White wine vinegar
2 Tablespoon Maple syrup (or to taste)
1/2 Teaspoon Minced Garlic - 1 garlic clove
Salt to taste (I have added 1/2 teaspoon of pink Himalayan salt)
1/4 Teaspoon Ground Black Pepper
1/4 Teaspoon Cayenne pepper (Optional)
1/2 to 1 Tablespoon Toasted Sesame Oil (Adjust the quantity to your liking)
