Add 1/2 cup powdered sugar and mix until incorporated.
Add 1 teaspoon vanilla extract and blend until smooth.
Unfold the thawed puff pastry sheets and cut them into rectangles, following the creases or using a sharp knife.
Place the pastry rectangles on a pizza stone or baking sheet lined with parchment paper.
Scoop two portions of the cream cheese mixture onto each pastry rectangle, smoothing it down but not going to the edges.
In a small dish, beat 1 egg with a pinch of salt to create an egg wash.
Brush the edges of the pastry with the egg wash to seal.
Bake in the preheated oven until golden brown, about 15-20 minutes.
