Heat olive oil in the Instant Pot and add the chopped onion and garlic to sauté.

Add all the chopped vegetables to the pot and cook for 15 minutes.

Season the beef flank with salt and black pepper.

Place the beef on top of the vegetable mixture in the Instant Pot.

Add 1/4 cup of water to the pot and close the lid.

Cook on high pressure for 40 minutes.

Once cooked, remove the beef and shred it.

Return the shredded beef to the pot and let it absorb the sauce for a few minutes.
