Make pasta by mixing 300 grams of flour, 3 eggs, and some salt in a stand mixer for about 5 minutes, adding a tablespoon of water if too dry.
Wrap the dough in plastic wrap and let it rest at room temperature for 45 minutes to an hour.
Chop the cabbage into small squares and place in bowls, mixing in salt to draw out moisture; let it sit for 30 minutes.
Roll out the rested dough using a pasta roller, cutting it into squares similar in size to the cabbage.
Squeeze excess moisture from the cabbage after it has rested.
Melt clarified butter in a skillet over medium heat, then add chopped onion and cook for about 5 minutes until caramelized.
Add 3 tablespoons of sugar to the skillet and let it melt down without stirring, then return the onions to the pot.
Add the cabbage and 50 ml of the water that came out of the cabbage, cover, and cook for 30 minutes.
Boil water and cook the fresh pasta for about 1-1.5 minutes, then add it directly to the cabbage mixture.
Stir in pepper and white wine vinegar, taste for seasoning, and serve.
