Prepare the caramel by using 1.5 cups of sugar, stirring it over high heat until melted and golden brown, watching closely to avoid clumps.
Pour the caramel into a flan mold and let it sit while preparing the flan mixture.
In a blender, combine 1 block of cream cheese with 1 can of evaporated milk until smooth.
Add 1 can of sweetened condensed milk, 1 cap of vanilla extract, and a little bit of salt to the blender and mix until combined.
Add 5 eggs to the mixture one at a time, blending after each addition.
Preheat the oven to 350°F (175°C).
Transfer the flan mixture into the caramel-coated mold.
Place the mold in a larger baking dish and add water to the baking dish (not yet added at this point).
Put the flan mold in the oven, then add water to the baking dish to create a water bath.
Bake for 45 minutes, checking doneness with a toothpick or knife; if it comes out dirty, add more time in 5-minute increments until done (total baking time was about 1 hour and 15 minutes).
Once baked, let the flan cool for about an hour before transferring it to a serving plate.
Run a butter knife around the edges of the flan to loosen it before inverting it onto a plate.
Refrigerate the flan for another hour before serving.
