Cook on medium heat for 25-30 minutes until fully cooked and liquid dries up completely.
Prep onion and mixed bell peppers for the kebab and set aside.
Let the cooked gizzards cool down completely before skewering.
Insert gizzards and bell peppers onto skewers, alternating as desired.
Drizzle 2-3 tablespoons of olive oil over the skewers.
Coat the gizzards with suya spice, ensuring even coverage.
Preheat a grill pan and drizzle with 1 tablespoon of olive oil.
Grill skewers for 2-3 minutes on each side until cooked through.
