Sweet Potato Toast

2 medium sweet potatoes
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 avocado, sliced
1/4 cup cherry tomatoes, halved
1 tbsp fresh cilantro, chopped
1/2 lime, juiced
1/4 tsp red pepper flakes (optional)

Preheat the oven to 400°F (200°C).

Wash and peel the sweet potatoes, then slice them into 1/4 inch thick slices.

In a bowl, toss the sweet potato slices with olive oil, salt, and black pepper until evenly coated.

Arrange the sweet potato slices on a baking sheet in a single layer.

Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and slightly crispy.

While the sweet potatoes are baking, prepare the avocado topping by mashing the avocado in a bowl and mixing in lime juice, salt, and red pepper flakes if using.
