1/2 cup tinned, chopped or grated tomatoes
1 tbs tomato puree
1-2 green chilies
1/2 tsp black pepper
1 tsp paprika
1/2 tsp cumin powder
1/4 tsp turmeric
1/2 tsp chili flakes
1 tsp cajun seasoning
2-3 spring onions
2 cups rice (basmati)
3 & 1/2 cups hot water
squeeze of fresh lemon juice
fresh coriander
lemon slices

Add 1-2 green chilies, 1/2 tsp black pepper, 1 tsp paprika, 1/2 tsp cumin powder, 1/4 tsp turmeric, and 1/2 tsp chili flakes; mix well.

Add 1 tsp cajun seasoning and 2-3 spring onions; mix well.

Cover and simmer for 10 minutes.

Add 2 cups of washed and soaked basmati rice and gently mix into the mixture.

Pour in 3 & 1/2 cups hot water and squeeze in fresh lemon juice; stir gently and bring to a boil.

Reduce flame to low when it starts to boil, then cover and cook until liquid has been absorbed, gently turning the rice halfway through cooking after about 12 minutes.

Cover with a kitchen towel or damp cloth, then cover and cook until liquid has fully absorbed.

Garnish with fresh coriander and lemon slices before serving.
