Slice up 3 red onions and 3 bell peppers, removing the core and seeds from the bell peppers.

Place the sliced onions and bell peppers into a bowl with around 4 or 5 chilies (seeds can be removed for less spice).

Crush around 5 garlic cloves and add them to the bowl.

Add around 50 ml of avocado oil to the bowl.

Season the mixture with 1 tablespoon each of paprika, smoked paprika, chili powder, salt, black pepper, and dried rosemary. Toss until everything is coated.

Transfer the vegetable mixture into a tray and place it in the oven.

Spatchcock the chicken by removing the spine with kitchen scissors, then press down on the chicken to flatten it.

Season the chicken generously with salt on both sides and place it in the fridge while preparing the sauce.

After about 30 minutes, remove the roasted veggies from the oven and place them in a food processor.

Add the zest and juice of 2 lemons, some more avocado oil, and red wine vinegar to the food processor.

Blend the mixture for around 5 minutes until smooth to create the sauce.

Use about half of the sauce to coat the chicken, spreading it evenly in the tray with the roasted veggies.

Bake the chicken in the oven at 180°C for 40 minutes.

After 40 minutes, add more salt to the chicken and turn the oven to the grill (broil) setting at 200°C for 15-20 minutes until the chicken is nicely colored.

Let the chicken rest for at least 20 minutes before slicing into it.
