Avocado oil is healthier, while canola oil is more budget-friendly.

Parmesan adds a similar cheesy flavor, but is not vegan.

Take 1 large tuber of celery (approx. 800 g) and mix with a little salt.

Leave the celery to stand for about ten minutes so that it absorbs water.

In a separate bowl, mix 2 tbsps of ground linseed with water and leave to swell briefly.

Finely chop 1 small onion and add it to the mixture.

Add ½ tsp of chili flakes to taste, 1 tsp of paprika powder, and 1 tsp of mustard.

Incorporate 3 tbsps of flour and 2 tbsps of breadcrumbs into the mixture.

Season with salt and pepper to taste.

Fry the mixture in a pan with a little vegetable oil or vegan butter until golden brown and crispy on all sides.
