Prepare fresh sardines; you can cook them whole with heads and entrails or clean them first.
To clean, hold the sardine by the head, press your nail into the belly, and pull down to remove the spine and entrails.
Rinse the cleaned sardines under running water.
If you prefer, you can ask your fishmonger to clean them for you.
Sprinkle coarse salt on both sides of the sardines.
Preheat the air fryer to 200°C (about 400°F) for 3 minutes.
Place parchment paper in the air fryer basket to prevent mess.
Arrange the sardines neatly in the air fryer basket.
Drizzle olive oil over the sardines; if you don't have spray oil, just pour a little oil on top.
Cook the sardines in the air fryer at 200°C for 7 minutes.
If your sardines are larger, cook them for an additional 1.5 to 2 minutes, but do not exceed that time to avoid drying them out.
After 5 minutes of cooking, flip the sardines to ensure even browning on both sides.
After flipping, cook for an additional 2 minutes at 200°C.
