Heat mustard oil in a pan over medium heat until shimmering.
Add chopped onions, garlic, and ginger; sauté until fragrant and golden brown, about 5 minutes.
Stir in turmeric, coriander, cumin, salt, and black pepper; cook for 1-2 minutes.
Add boiled lentils to the spice mixture; stir well and simmer for 5 minutes.
Peel and chop potatoes; add them to boiling water and cook until tender, about 15 minutes.
In a separate pan, stir-fry fermented leafy greens with salt and green chilies for 5-7 minutes.
Serve rice, lentils, potatoes, and stir-fried greens together on a plate.
