Prepare the marinade by mixing olive oil with maggi cubes, aromat seasoning, ground coriander, paprika, ground cumin, jumbo crayfish flavoring stock, garlic granules, fish seasoning, white pepper, black pepper, and mixed herbs.
Score the tilapia and coat it with the marinade, ensuring it is well coated.
Refrigerate the marinated tilapia for 1-2 hours.
Slice the tomatoes, red onions, garlic, spring onions, and chilies for the sautéed vegetables.
Cook the tilapia in an air fryer for 25-30 minutes at 200 degrees Celsius.
In a frying pan, sweat the red onions in olive oil on low heat for 1 minute, then add garlic and cook for another minute.
Add fresh tomatoes and sauté for 1 minute, followed by spring onions and chilies, cooking each for 1 minute.
Add maggi cubes to the sautéed vegetables and simmer for 2 minutes, adjusting seasonings as needed.
In a bowl, break up the cassava couscous and season it with maggi cubes and salt, adding a little water and olive oil for moisture.
Microwave the cassava couscous for 5 minutes until fluffy.
Plate the tilapia, add the sautéed vegetables on top, and serve with the cassava couscous on the side.
