Pimento Cheese

Cultural Context

Pimento cheese is a classic Southern dish, often referred to as 'the caviar of the South.' It is commonly served as a spread for crackers or sandwiches and is a staple at picnics and gatherings. Its origins can be traced back to the early 20th century, with variations appearing across the Southern United States. The dish reflects the region's love for rich, creamy flavors and is often enjoyed in both casual and festive settings.

1

Add the gouda, Packin’ Heat, beer, garlic clove, mustard, and Worcestershire sauce to the food processor or blender, and set to puree. Run until the mixture becomes smooth, scraping down the sides and repeating the process until smooth in texture.

2

Add the mayo and pulse just to blend it together.

3

Pour sauce mixture into a bowl. Add the shredded cheeses, pimentos, and black pepper. Fold the mixture together until mixed well.

4

Spoon into a serving bowl or mason jar.

5

Chill in the fridge for 30 min-1 hour prior to serving, to allow the flavors to set in. Or, if you cannot wait, it’s still really good immediately after making it!

6

Serve with crackers, tortilla chips, on bread for a sandwich, or top a burger with it!
