Traditionally made with salt cod, these fritters reflect the region's fishing heritage and are commonly enjoyed during celebrations and gatherings. Today, variations exist across the Caribbean, with many adding different spices and herbs to enhance flavor.

Soak 170 grams of salt cod in cold water for one day, changing the water twice to remove saltiness.
Cut the soaked salt cod into pieces and cook it in water for a couple of minutes until flaky.
Strain the cooked salt cod and drain it on paper towels to remove excess water.
Chop scallions and parsley finely, ensuring to slice rather than crush the herbs to maintain color.
Add the chopped scallions, parsley, and jalapeno to the bowl with the cod.
Mix in 170 grams of flour and a small amount of baking powder (about half a teaspoon).
Add water gradually until the mixture reaches a relatively liquid consistency, adjusting as needed.
Incorporate 1 egg into the mixture and blend it quickly until smooth.
Let the batter rest for about one hour.
Heat oil to 350 degrees Fahrenheit in a deep skillet.
Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
Fry until the fritters are light golden brown, ensuring they are cooked through but not too crispy.
Remove the fritters and drain them on paper towels before serving.
