Taco Macaroni and Cheese

Boil macaroni in salted water according to package directions.

Drain macaroni and set aside.

In a skillet over medium to medium-high heat, add oil and 80/20 ground chuck.

Season the meat generously with kosher salt (use half as much if using table salt).

When the meat is halfway browned, add diced onions and stir for another 10 minutes until the meat is brown and the onions are soft.

Take the package of taco seasoning and drain the meat.

Add the taco seasoning and hot water to the meat, then simmer for about 10 minutes until most of the water has been absorbed.

Keep the taco meat warm.

Once the macaroni is done and drained, add butter, milk, and the cheese packet that comes in the macaroni and cheese box.

Stir until the butter is melted and everything is well mixed.

Add the taco meat to the macaroni and cheese and give it a quick stir until mixed.

Plate the dish and top it off with some cheddar cheese.
