1 Tbsp butter (to cook peppers and onions)
1/2 medium onion finely chopped
Red bell pepper, seeded and finely chopped
2 Tbsp butter to cover bottom of large pan (to cook crappie cakes)
1 lb. raw Crappie fillets or other mild white fish finely chopped
1 teaspoon minced garlic (or the equivalent in garlic powder)
2 Tbsp of flour (use coconut flour for low-carb fish cakes)
3 Tbsp of breadcrumbs (use pork rind crumbs for low-carb fish cakes)
1 teaspoon dried red pepper flakes
1/2 teaspoon Lemon Pepper
1/2 teaspoon of Cajun seasoning
1/2 teaspoon Old Bay Seasoning
3 Tbsp mayonnaise
1 large egg

Melt 1 tablespoon of butter in a medium pan and add peppers and onions. Cook over medium heat for about 5 minutes. When done, dump mixture into a small bowl and set aside.

In a large pan, heat 2 tablespoons of butter and enough cooking oil to cover the bottom of the pan. Heat to medium-high.

Put all the rest of the ingredients into a large bowl. Also put into the bowl the now-cooling peppers and onions which you set aside. Mix everything thoroughly with a spatula or your hands.

Form the mixture into flattened balls about 2 to 3 inches in diameter. Each time you have formed a ball, flatten it and gently drop it into the large pan with hot butter and oil.

Cook the patties for about 3 minutes on each side until nicely browned on both sides. Move each to paper towel when finished.
