Catch blue crabs using a crab trap and clean them by removing the gills and mouth parts.
Rinse the cleaned crabs with water and break them into two pieces, leaving the legs on.
Prepare a crab boil with 3 quarts of water, 1 tablespoon of vinegar, and 3 tablespoons of salt in a Dutch oven.
Bring the water to a simmer and add the crabs, cooking for 5 minutes uncovered to let them absorb the flavor.
Remove the crabs from the pot and pick the meat from the shells, placing it in the refrigerator.
In a 12-inch cast iron skillet, melt 4 pats of butter over low heat.
Add 1/2 cup of onions and 1/4 cup of diced celery to the skillet, cooking until softened but not browned.
In a mixing bowl, combine 3 tablespoons of mayonnaise, 2 egg yolks, hot sauce, spicy mustard, the juice of 1/2 lemon, and key lime juice.
Add the softened onions and celery mixture to the bowl and mix well.
Season the mixture with cracked black pepper, Everglades seasoning, and Old Bay seasoning to taste.
Form the crab mixture into patties and prepare for frying.
