⅓ cup – 120g cold sparkling water
1 ½ cups shredded coconut
Vegetable oil for frying

Score and remove skins from the bananas, cut off ends, then cut into two pieces and split each piece into two slices.

In a mixing bowl, add corn starch, flour, baking powder, cinnamon, and salt. Set aside.

Place the shredded coconut on a plate and some all-purpose flour for coating on another plate.

Heat vegetable oil in a deep pan to 340°F (170°C).

Add the very cold sparkling water to the dry mix as you stir. Mix well but don’t overdo it to keep the batter cold.

Coat the banana pieces in flour, dip into the batter, let any excess drip off, then place in shredded coconut and pack well so the coconut sticks.

Deep fry four banana pieces at a time in the hot oil until golden brown and crispy.
