Mexican Corn on the Cob

1/2 cup mayonnaise
1/2 cup crumbled cotija cheese
1 tsp chili powder
1 lime, juiced
1/4 cup chopped fresh cilantro

Preheat the grill to medium-high heat.

Husk the corn and remove all silk strands.

Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is tender and slightly charred.

In a bowl, mix together the mayonnaise, lime juice, chili powder, and salt to taste.

Once the corn is cooked, remove it from the grill and brush the mayonnaise mixture generously over each ear of corn.
