1 cup Arborio rice
4 cups vegetable broth
1 medium onion, finely chopped
2 cloves garlic, minced
1/2 cup dry white wine
1/2 cup grated Parmesan cheese
1/4 cup fresh lemon juice
1 tbsp lemon zest
2 tbsp olive oil
Salt to taste
Black pepper to taste
Fresh parsley for garnish
