1/2 cup bitter orange juice
2 dried chile de árbol
2 dried chile ancho
1 tablespoon cumin
1 teaspoon black pepper
1 tablespoon oregano
4 cloves whole garlic
2 teaspoons salt
1 lb ground pork
1 lb turkey
1 cup green peppers, chopped
1 medium onion, chopped
2 medium tomatoes, chopped
1 habanero, chopped
1 tablespoon quepasote
2 eggs

Soak achiote seeds in bitter orange juice for at least 2 hours.

Burn chile de árbol and chile ancho until very black outside.

Soak burnt chiles in water multiple times to remove bitterness and soften them.

Wash the chiles and remove the stems, wearing gloves to avoid spiciness.

Blend the burnt chiles with achiote and orange juice, cumin, black pepper, oregano, whole garlic, salt, and a little water to make a paste.
