Start by preparing the charque (dried beef) by slicing it and letting it dry for 3 days to a week depending on the weather.

Boil water in a pot and add the charque, chopped onion, mint leaves, and celery. Cook for 45 minutes to 1 hour until the meat is tender.

Chop the onion, garlic, and tomato into small pieces.

Heat a pan and add oil to fry the rice and sauté the vegetables.

Add achiote to the oil to color it, being careful not to burn it.

Once the oil is colored, strain out the seeds from the achiote and reserve the oil.

Add 4 teaspoons of the colored oil to the pan and then add the rice, stirring until it changes color.

After the charque is cooked, shred it into smaller pieces.

In the same pan, add the sautéed onions and cook until they are translucent.

Add the chopped tomato, cumin, and black pepper, and sauté until the tomato breaks down.

Add the shredded charque to the mixture and sauté for an additional 3 to 5 minutes.

Combine the charque mixture with the rice, mixing well.

Pour in 2 cups of the charque broth and 2 cups of hot water, stirring to combine.

Cover the pot and cook, monitoring to prevent burning, until the rice is cooked through.

Once cooked, prepare the plantains by slicing and frying them, and also fry the eggs.

Serve the majadito with fried plantains and eggs.
