Wash and rinse the chickpeas.

Lay the chickpeas on a paper towel-covered baking sheet to dry.

Allow the chickpeas to dry for approximately two hours.

Place the dried chickpeas in a bowl and add 2 tablespoons of olive oil; mix well.

Place the chickpeas on two separate baking sheets to cook more evenly.

Preheat the oven to 425°F.

Place the baking sheets in the oven and bake for 30 minutes.

In a small heat-safe glass bowl, add 2 tablespoons of honey, 1 teaspoon of cinnamon, and 1 teaspoon of vanilla extract; mix well.

After 30 minutes, take out both trays and turn the chickpeas, then place them back in the oven for an additional 15 minutes.

After 10 to 12 minutes, combine the chickpeas onto one tray and sprinkle some cinnamon sugar over them.
