Chop 2 small onions, 3-4 green chilies, 1 inch ginger, and 7-8 garlic cloves in a chopper.

Heat 1/2 cup cooking oil in a kadhai until hot.

Add the chopped ingredients to the hot oil and sauté for 3-4 minutes until soft.

Stir in 1 teaspoon coriander powder, 1 teaspoon crushed red chili, 1/2 teaspoon turmeric powder, and salt to taste, and cook until the raw smell disappears.

Add 1 chopped tomato and cook until it softens.

Add a little water to prevent burning and help the tomato cook.

After 7-8 minutes, the mixture should be well cooked and oil should separate.

Add 2 chopped potatoes, 1 medium cauliflower, 1 cup peas, 1 cup carrots, and 1/2 cup bell pepper to the mixture and mix well.

Add 1/2 teaspoon dried fenugreek leaves and 1/2 teaspoon garam masala and mix everything together.

Cover and cook on low heat for 15 minutes to allow the vegetables to steam.
