Peel and cut yam into cubes.
Rinse yam under cold water.
Boil yam in a pot with enough water until tender, about 15-20 minutes.
Drain excess water from the yam and set aside.
Heat vegetable oil in a skillet over medium heat until shimmering.
Add diced onions and sauté until translucent, about 3-4 minutes.
Stir in chopped bell pepper, tomatoes, and scotch bonnet; cook until softened, about 5 minutes.
Add garlic and ginger; sauté for another 2 minutes until fragrant.
Combine the cooked yam with the vegetable mixture in the skillet.
Add seasoning cubes, salt, and bay leaves; mix well.
Pour in water to achieve desired consistency; simmer for 5-10 minutes.
Fold in spinach, carrots, and green peas; cook until vegetables are tender, about 3-5 minutes.
Adjust seasoning if necessary and remove from heat.
Garnish with coriander before serving.
