Preheat the oven to 210°C (410°F).

Prepare a baking tray with baking paper.

In a large bowl, combine 3 and 1/2 cups of plain flour, 1 teaspoon of salt, and 1 teaspoon of baking soda.

If desired, add 2 teaspoons of sugar and 1/2 cup of chopped nuts or dried fruit.

Chop 30 g of butter into small pieces and rub it into the flour mixture until no butter is visible.
