This simple bread became a staple in Irish households, often associated with traditional meals and celebrations. Today, variations exist worldwide, incorporating different flours, seeds, and fruits, while still honoring its humble roots.

Preheat the oven to 210°C (410°F).
Prepare a baking tray with baking paper.
In a large bowl, combine 3 and 1/2 cups of plain flour, 1 teaspoon of salt, and 1 teaspoon of baking soda.
If desired, add 2 teaspoons of sugar and 1/2 cup of chopped nuts or dried fruit.
Mix all the dry ingredients together.
Chop 30 g of butter into small pieces and rub it into the flour mixture until no butter is visible.
Create a well in the center of the dry ingredients and set it aside.
In a jug, whisk together 1 and 1/2 cups of buttermilk and 1 egg.
Pour the buttermilk and egg mixture into the flour mixture and mix quickly with a spoon until a sticky dough forms.
Dust the dough with a little plain flour and shape it into a loaf on the baking tray.
Using the back of a knife, cut a cross into the top of the loaf.
Poke a hole in each corner of the bread with a floured chopstick to 'release the fairies'.
Rub any remaining buttermilk over the top of the loaf.
Bake in the preheated oven for 15 minutes at 210°C, then reduce the temperature to 200°C (392°F) and bake for an additional 20 minutes.
To check if the bread is ready, flick the bottom and listen for a hollow sound.
