Weigh out your ingredients and have them ready.
In a deep bowl, add plain flour and spelt flour, then mix well to incorporate.
Add a generous pinch of salt and bicarbonate of soda, and mix again.
Incorporate nuts and dried fruit into the flour mixture.
Melt some butter and mix it into the dry ingredients.
Add plant milk and mix until well combined.
Lightly flour a surface and tip the dough out, shaping it slightly without excessive kneading.
Shape the dough into a flatter rustic loaf for even baking.
Line a 9-inch cake tin with parchment paper and place the dough inside.
Score the top of the loaf deeply with a sharp knife.
Bake in the oven for around 45 minutes until baked through.
Remove from the oven, let cool slightly, then slice and serve with jam.
