Preheat the oven to 200°C fan.
Combine wholemeal flour and white flour in a bowl.
Add baking soda and salt to the flour mixture.
Add a hint of grated Parmesan cheese and some cooked onion to the mixture.
Grate cheddar cheese and add it to the bowl.
Mix the dry ingredients and cheese together.
Pour in full-fat buttermilk and mix to combine.
Add a splash of water to the mixture for additional liquid.
Bring the mixture together with your hands to form a soft, sticky mixture.
Divide the dough into two portions.
Shape each portion into a rough dome by flattening and tucking underneath.
Wet your hands to help the Parmesan stick to the loaves.
Place the shaped loaves on a lined baking tray.
Cut a deep cross into the top of each loaf with a scraper.
Bake in the preheated oven for 20-25 minutes until golden brown.
Remove from the oven and let cool for half an hour before slicing.
