Cranberry Curd Tart

1 large egg yolk
3/4 cup fresh or frozen cranberries
1 cup granulated sugar
1/4 cup fresh lemon juice
3 large eggs
1/4 cup unsalted butter, melted
1 tsp vanilla extract
1/4 tsp salt

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the flour, softened butter, sugar, and salt. Mix until crumbly.

Add the egg yolk and mix until the dough comes together. Press the dough into a tart pan evenly across the bottom and up the sides.

Prick the bottom of the crust with a fork and bake for 15-20 minutes or until lightly golden. Remove from the oven and let cool.

In a saucepan, combine cranberries, sugar, and lemon juice. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes. Remove from heat and let cool slightly.

In a mixing bowl, whisk together the eggs, melted butter, vanilla extract, and salt. Gradually add the cranberry mixture and stir until well combined.

Pour the cranberry curd filling into the cooled tart crust.
