Teriyaki Pork with Vegetables and Penne Pasta

Teriyaki, a cooking technique that originated in Japan, involves grilling or broiling meat with a glaze of soy sauce, mirin, and sugar. This dish combines traditional teriyaki flavors with pasta, reflecting a fusion of Japanese and Italian cuisines. Cook penne pasta in boiling salted water until al dente, about 10-12 minutes.
Drain pasta and set aside, reserving a cup of pasta water.
Slice pork tenderloin into thin strips.
Heat sesame oil in a large skillet over medium-high heat until shimmering.
Add pork strips to the skillet and season with salt and black pepper.
Sear pork until browned and cooked through, about 5-7 minutes.
Remove pork from skillet and set aside.
In the same skillet, add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
Add broccoli, bell peppers, and carrots to the skillet, stir-frying for 4-5 minutes until tender-crisp.
Return the pork to the skillet and pour in teriyaki sauce and soy sauce.
Stir to combine and cook for another 2-3 minutes, allowing the sauce to thicken slightly.
Add cooked penne pasta to the skillet, tossing to coat with the sauce.
If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Garnish with sliced green onions and sesame seeds before serving.
