3 tomatoes, deseeded and diced
1/2 cucumber, deseeded and diced
2/3 of a bunch of parsley, chopped

3 carrots
6 tbsp olive oil
2 tbsp maple syrup
4 tbsp Ras el hanout
Juice of 1/4 lime

250g skyr or yogurt
1/3 of a bunch of parsley
1/3 of a bunch of mint
1 tbsp maple syrup
Juice of 1/4 lime
2-3 tbsp water

Prepare the couscous salad by mixing cooked couscous with diced tomatoes, cucumber, parsley, mint, olive oil, minced garlic, honey or maple syrup, lime juice, cayenne pepper, cumin, salt, and pepper.

Slice the bell peppers, mushrooms, and carrots for the vegetable mix.

Toss the vegetables with olive oil, maple syrup, Ras el hanout, lime juice, and salt, then roast them in the oven.

Prepare the sauce by combining skyr or yogurt with chopped parsley, mint, maple syrup, lime juice, water, salt, and pepper.

Pickle the onions by soaking sliced red onions in a mixture of apple cider vinegar, sugar, juniper berries, cloves, black pepper, rosemary, and thyme.
