Cut carne seca into irregular pieces, ensuring some fat is left on.
Use a large, open pot (antiaderente or iron) for better visibility.
Add 4-5 tablespoons of azeite to the pot and heat it up.
Add the carne seca to the pot and fry until well browned.
Add 5-6 crushed dentes de alho and half of a chopped cebola.
Stir and add 400 grams of mandioca, cooking until it changes color.
Add 3 peeled tomatoes and the remaining half of the cebola, along with 1/2 pimentão vermelho cut into large cubes.
Mix in 1 cup of the mixed herbs (salsinha, cebolinha, and coentro), reserving some for garnish.
Cover the mixture with hot water, ensuring everything is submerged.
Add a pinch of pimenta do reino to taste, but no salt at this stage due to the carne seca.
Cover the pot and let it cook until the broth thickens and the mandioca is tender, stirring occasionally.
Check the consistency of the broth; it should be thick and creamy before serving.
