Le Genovesi

Prepare the cream by mixing 75 gr of sugar, 20 gr of cornstarch, the grated zest of 1 organic lemon, 1 whole egg, a pinch of salt, and 250 ml of milk in a saucepan. Cook until thickened and set aside.

For the pastry, combine 150 gr of semolina, 150 gr of all-purpose flour, a pinch of salt, 100 gr of cold butter, 70 gr of sugar, and 1 whole egg in a bowl. Mix until a dough forms.

Roll out the pastry and cut into circles. Place a spoonful of the cream filling in the center of each circle, then fold and seal the edges.

Bake the cookies until golden brown and dust with powdered sugar before serving.
