Coconut flour is lower in carbs, while all-purpose flour is more economical.
Preheat the oven to 170°F (77°C).
Cut the cheddar cheese into small pieces using a cheese cutter.
Use a fine grater to grate the cheese until it's very thin.
In a mixing bowl, add the grated cheese and one egg yolk as a binder.
Mix the cheese and egg yolk together until a dough forms, pressing it down to combine well.
Pack the cheese mixture into goldfish molds, ensuring they are filled all the way and smooth on top.
Sprinkle salt on top of the packed cheese mixture if not added during mixing.
Place the molds in the preheated oven and dehydrate for about 1.5 hours, checking for a crunchy texture.
Once done, carefully pop the crackers out of the molds and let them cool.
