Preheat the oven to 350°F (175°C).

Core the apples and place them in a baking dish.

In a bowl, mix together the brown sugar, rolled oats, chopped walnuts, ground cinnamon, nutmeg, and raisins.

Stuff the mixture into the cored apples, pressing down gently to pack it in.

Place a small piece of butter on top of each stuffed apple.

Pour the apple juice into the bottom of the baking dish around the apples.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and bake for an additional 15-20 minutes, or until the apples are tender and golden brown.

Serve warm, optionally with vanilla ice cream or whipped cream.
