Boil water in a bowl and add 1 tablespoon of salt.

Once the water is hot, add the chow mein noodles and boil for about 3-4 minutes until they are cooked but not too soft to avoid sticking.

Drain the noodles using a strainer and rinse with cold water to prevent them from sticking together.

In a medium flame, heat a kadhai and add 2 tablespoons of vegetable oil.

Once the oil is slightly hot, add 1 tablespoon of ginger paste and chopped onions.

Add chopped tomatoes and cook for 1-1.5 minutes until they are soft.

Season with salt (about 1/2 teaspoon), black pepper (1/2 teaspoon), coriander powder (1/2 teaspoon), and Kashmiri red chili powder (1/2 teaspoon).

Cook the spices for about 3 minutes until well combined.

Add the chow mein noodles to the kadhai and mix everything well for about 2 minutes until the noodles are fully incorporated with the spices.
