Preheat the oven to 350°F (175°C).
Add rolled oats to a blender and blend into a fine consistency.
Add coconut flour, real maple syrup, baking soda, pumpkin pie spice, ginger powder, sea salt, lemon juice, non-dairy milk, and eggs to the blender and blend until smooth.
Pour the batter into a lightly greased loaf pan and bake for 55 minutes.
Let the bread cool before enjoying.
Roll out the pie dough and cut out small circles about 2-3 inches in diameter.
Gently press the dough circles into a non-stick or lightly greased muffin tin.
In a medium bowl, whisk the eggs, then add real maple syrup, cassava flour, vanilla, salt, and pecans, and mix together.
Pour the mixture into the dough cups and bake in a preheated oven at 350°F for 20 to 30 minutes.
In a medium bowl, whisk together unsweetened pumpkin puree, maple syrup, melted coconut oil, and ground flax seeds for the wet ingredients.
In a large bowl, add gluten-free all-purpose baking flour, pumpkin pie spice, ginger powder, baking soda, baking powder, and salt for the dry ingredients and stir until fully combined.
Add the wet ingredients to the dry ingredients and mix until a sticky batter forms.
Scoop the batter into balls and chill covered in the fridge for 20 minutes.
Break the chilled dough into small balls about one inch in size, then form into rounds and flatten with your hand to make cookies.
For soft cookies, bake for 12 minutes; for crispier cookies, bake for 14 minutes.
Let cool and enjoy.
