Start by making the dough: rub the butter into the flour with your fingertips until well incorporated.
Add a couple tablespoons of cold water, just enough for the dough to come together.
Divide the dough into two pieces, one slightly larger than the other.
On a lightly floured surface, roll out the larger piece of dough into a large circle about the width of your thumb.
Wrap the rolled dough and set it in the fridge for at least an hour.
Repeat the rolling process with the second piece of dough.
Once the dough is rested, take the larger piece out, roll it out again to line a pie dish, ensuring it overhangs the sides.
Put the lined pie dish in the fridge while preparing the filling.
In a saucepan, add cranberries, sugar, and water, and set it over medium-low heat.
Allow the sugar to melt slowly without raising the heat to avoid burning.
Once the sugar liquefies, stir to coat the cranberries and let it boil for about 2 minutes on low heat.
Turn off the heat and let the mixture cool slightly while peeling, coring, and slicing the apples into thin slices.
Line the bottom of the prepared pie dish with the apple slices.
Pour the cranberry mixture over the apples, distributing the cranberries evenly.
Roll out the second piece of dough and cut out a disc for the top of the pie.
Place the top crust over the cranberries, crimping the edges with the bottom crust to seal.
Cut a few holes in the top crust to let steam escape.
Bake in the oven at 425°F (220°C) for 10 minutes.
Reduce the oven temperature to 300°F (150°C) and bake for an additional 45 to 50 minutes until the top is browned and the internal temperature reaches 195°F to 200°F.
