Select a variety of apples: Golden Delicious, Jazz, Granny Smith, and Fuji.
Peel, core, and slice 14 cups of apples using an apple peeler corer slicer tool.
Soak the sliced apples in a solution of lemon juice and water or fruit fresh to prevent browning.
Wash and sort 7 cups of cranberries.
In a large pan, combine 5.5 cups of sugar and 1.5 cups of clear gel, mixing well.
Add 1 teaspoon of nutmeg and 1 tablespoon of cinnamon to the sugar and clear gel mixture and mix thoroughly.
Pour in 7.5 cups of apple juice gradually, mixing well after each addition.
Add the cranberries and the prepared apple slices to the mixture and mix everything together.
Bring the mixture to a boil on the stove, stirring continuously until it thickens and bubbles.
Once boiling, prepare canning jars by wiping the rims with a paper towel dipped in vinegar.
Ladle the hot mixture into canning jars, leaving 1 to 2 inches of headspace.
Place the canning lid and ring on each jar, tightening by hand.
Process the jars in a hot water bath canner for 25 minutes, ensuring to pick up jars by the glass, not the rings.
