1 can (13.5 oz) coconut milk
2 cups water
1 medium onion
3 cloves garlic
1 medium bell pepper
1/4 cup cilantro
2 tablespoons olive oil
2 bay leaves
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon thyme
1/4 cup scallions
1 lime
1 medium carrot

Rinse the rice under cold water until the water runs clear.

Soak the guandules in water for 1-2 hours to soften.

Heat olive oil in a large pot over medium heat until shimmering.

Add chopped onion, garlic, and bell pepper; sauté until softened, about 3-4 minutes.

Stir in the soaked guandules, coconut milk, and water; bring to a boil.

Add bay leaves, thyme, salt, and black pepper; reduce heat to low.

Cover and simmer for 15-20 minutes until guandules are tender.

Stir in the rinsed rice and mix well.

Add additional water if needed to cover the rice by about an inch.

Bring to a boil again, then reduce heat to low and cover tightly.
