2 ½ cups of Long Grain White Rice
2 cups of Pigeon Peas - Gandules
½ White Onion
½ Cubanelle Pepper or Bell Pepper
1 ½ tbsp Tomato Paste
1 tbsp Sazón con Achiote
1 ½ tbsp Chicken Bouillon Cube
3 Garlic Cloves
½ tsp Dominican Orégano
Kosher Salt
Black Pepper to Taste

Add 2 ½ cups of long grain white rice to the Instant Pot.

Add 2 cups of pigeon peas (gandules) to the pot.

Chop and add ½ white onion and ½ cubanelle or bell pepper.

Stir in 1 ½ tbsp of tomato paste and 1 tbsp of sazón con achiote.

Add 1 ½ tbsp of chicken bouillon cube and 3 minced garlic cloves.

Sprinkle in ½ tsp of Dominican oregano, kosher salt, and black pepper to taste.

Pour in 2 ½ cups of water and stir well to combine.

Seal the Instant Pot lid and set to cook on high pressure for 20 minutes.

Once done, let the pressure release naturally for a few minutes before opening the lid.
