Deep-Fried Pastry with Chocolate Dipping Sauce

Chocolate chips are often less expensive and easier to find.
Boil 1 and 1/3 cups of heavy cream in a small saucepan.
Pour the boiling cream over 2 cups of chocolate chips and whisk until melted, creating a ganache.
Set aside half of the ganache for hot chocolate and the other half for dipping sauce.
Add 3 cups of milk to the remaining ganache and whisk to combine, keeping it warm on the stove.
Reduce 1/2 cup of orange juice over medium heat until it thickens to about 2-3 tablespoons.
Add 2 tablespoons of butter to the hot orange syrup and let it melt.
Zest one whole orange into the mixture for added flavor.
Juice half a lemon using a fork to extract all the juice.
Add 1/3 cup of sugar to the mixture.
Incorporate 1/3 tub of buttermilk into the mixture for tenderness.
Combine the wet and dry ingredients, including baking soda, baking powder, all-purpose flour, and salt, until just blended.
Heat canola oil in a deep pot to 350°F for frying.
Use a melon baller to scoop the batter into the hot oil, one scoop at a time, being careful not to overcrowd the pan.
Fry until golden brown and remove from oil.
Dust the fried pastries with powdered sugar and additional orange zest.
