1 cup bell peppers
1 cup tomato
1 cup green onions

1/4 cup vinegar or lemon juice

For the no mayo potato salad, combine boiled potatoes with 1 cup grated carrots, 1 cup bell peppers, 1 cup tomato, 1 cup green onions, 1 cup cucumbers, 1/4 cup sugar cane vinegar, and 1/2 cup olive oil. Add salt and pepper to taste.
