Rinse 2 cups of long grain basmati rice until the water runs clear and soak for 10-15 minutes.

Chop 1 small onion and place it in a pot with a quarter cup of olive oil.

Add 2 whole garlic cloves to the pot with the onion.

Cook the onion and garlic over medium heat for about 10-12 minutes until the onion is golden and soft.

Add the cooked chickpeas to the pot and warm them through with salt and pepper.

Drain the soaked rice and add it to the pot.

Rinse the bowl used for the rice with 2 cups of water, adding it to the pot one cup at a time.

Add 2 teaspoons of salt and a little black pepper to the pot.

Bring the mixture to a boil, then cover and reduce to a simmer for about 15 minutes undisturbed.

After 15 minutes, gently mix the rice with a wide spatula to fluff it up.
