Brazilian-Style One Pot Chickpea Rice

2 cups rice
250 gm boiled chickpeas
3 tbsp boiled corn kernels
2 tbsp oil
1 medium onion (finely chopped)
8 cloves of garlic (finely chopped)
2 tsp turmeric powder
1 tsp chili flakes
4 cups water
1 Maggi cube
4 tbsp coriander (finely chopped)
2 tbsp lemon juice
salt (to taste)

Add 2 tbsp oil in a pot.

Add in the onion and garlic. Fry for 2-3 minutes.

Next, add in the turmeric, chili flakes and rice. Fry on high flame for 2 minutes, continuously stirring.

Next add in the four cups of water and a Maggi cube and give it a good stir.

Cook until the rice is almost done.

Now add in the boiled/canned chickpeas, corn kernels and chopped coriander. Squeeze in the lime juice and combine well.

Cook until the rice is fully done.
